Banana cakes
Using a recipe nicked from a friend but adapted slightly I made these this morning and very lovely they are too.
2 bananas - the more had it the better as you are going to mash ‘em up
2 eggs - beaten
4 oz butter (I use stork, cos it’s easier to cream and I am a lazy cook!)
6 oz soft brown sugar
8 oz flour (the recipe said plain with a teaspoon of baking powder, but I only had SR in the cupboard!)
Cream the butter and sugar, add the beaten eggs and mashed bananas.
Add the sifted flour and mix altogether. Seperate into cake cases - this made 16 this morning.
Cook at gas mark 4 for about 30 minutes or until spongey to the touch.
I solved the will the kids hate them and not eat them anyway so I might as well put walnuts in which I like but they don’t dilema by not having any in the cupboard to add. They are lovely without and the children have eaten loads although I was told they would be ‘even nicer with banana icing!’ (cream cheese maybe?)
